I'm being domestic tonight. King Ranch Chicken Nite! For those not from the Southwest, King Ranch Chicken is... eh... sort of like a Southwest Lasagna? Or maybe like a chicken enchilada casserole. You take cream of chicken soup, cream of mushroom soup, milk, a can of Rotel, a chopped onion, some cumin and chili powder and stir it all up. Then you use either flour or corn tortillas cut into strips and diced/cooked chicken, and layer all of the above. Cook for half an hour, cover with shredded Monterey Jack/Cheddar cheese, cook a bit more, and iss-done. IT IZ GOOT.

Went out for pizza last night, and all I could think was, AIR CONDITIONING, OH AIR CONDITIONING, HOW HAVE I MISSED THEE....

I did ABSOLUTELY nothing of value today. Except maybe cooking dinner. I feel all run down for some reason.

Watched the latest ep of Torchwood earlier. Finally, we get a bit of focus on Jack! I rather liked this one.

Hey, that sounds REALLY yummy. I love a good casserole. Do you think it will it work with low fat cream soups, whole wheat tortillas, and low fat cheese? I didn't cook today, but I will be cooking like crazy next week. We're having company twice, and

It was nummy. And yes, it should work fine with those substitutions. Oh, I also forgot to mention in my post that I mixed in a can of drained corn and a can of diced chilies. I hope you enjoy it if you decide to make it!

Yeah, it's probably the heat. lol I'm starting to sound like a broken record, I know. Ah, well.
